Beef Puff Pastry Roast

Préparation
Preheat the oven to Th 7/8 or 230°C. In a sauté pan, heat the oil and brown the roast on all sides over high heat, being careful not to pierce it.
Let it rest for 10 minutes and pat it dry carefully with absorbent paper. In the TurboChef, chop the peeled and germ-free garlic, the parsley, and the stripped thyme.
Spread this mixture over the roast. Wrap the roast in puff pastry.
Using the silicone brush, brush the overlapping parts of the pastry with egg wash (egg yolk mixed with water) to seal them well together, then spread the egg wash over the pastry. Butter and flour the bottom of the Ultra Pro 2 L.
Place the roast inside, cover, and bake for 25 minutes on the lower rack in the preheated oven. Let the roast rest for 10 to 15 minutes before slicing and serving seasoned with salt and pepper.
Note: salt before cooking a beef roast dries out the meat.
