Macarons français délicats avec coques croquantes et cœur fondant. Cette recette Tupperware permet de réaliser 36 macarons personnalisables avec différents parfums et garnitures au choix : ganache chocolat noir, blanc, fruits ou crème vanille-café.

Cooking Pot Préparation

Shells: beat the egg whites until stiff (Duochef), add the sugar and finish whipping.

Add the powdered sugar, almond powder, and desired flavor mixed together.

Gently mix to obtain a well-homogeneous mixture that forms a ribbon (dough neither too liquid nor too firm).

Make 36 macarons on a baking sheet (Multiflex Baking Sheet) placed in the cold oven tray.

Lift the oven tray and let it fall gently so that the dough settles slightly. Let rest for at least 30 minutes.

Bake the macarons and let them cool before carefully unmolding them.

Dark chocolate ganache: heat (MicroCook Pitcher 1 l) about 80 ml of whole cream for 1 min 20 at 600 watts, then pour it boiling over 80 g of dark dessert chocolate broken into pieces.

Mix until the chocolate is completely melted, then let cool.

Fill half of the shells with the ganache and assemble them two by two.

White chocolate ganache: heat (MicroCook Pitcher 1 l) 60 ml of cream for 1 min at 600 watts, then pour it boiling over 100 g of white chocolate pieces, 10 g of butter and mix.

Assemble as indicated above.

Fruit ganache: heat (MicroCook Pitcher 1 l) 40 ml of cream for 50 sec at 600 watts, add 80 g of white chocolate broken into pieces, 10 g of butter and mix.

Incorporate 40 ml of fruit coulis of your choice (raspberries, blackberries, strawberries, mangoes, passion fruit...).

Assemble as indicated above.

Praline ganache: heat (MicroCook Pitcher 1 l) 60 ml of cream for 1 min at 600 watts, then pour it boiling over 100 g of praline chocolate pieces, 10 g of butter and mix.

Assemble as indicated above.

Vanilla cream: whisk (MicroCook Pitcher 1 l) 125 ml of milk, 25 g of sugar, 1 level tablespoon of cornstarch, 1/2 teaspoon of vanilla powder or liquid, and 1 egg yolk.

Let rest for 2 min, whisk and cook for 3 min at 600 watts, stirring halfway through cooking.

Whisk vigorously, then let cool while whisking occasionally to prevent a crust from forming on top.

Assemble as indicated above.

Coffee cream: proceed as for vanilla cream by replacing the vanilla with 1 teaspoon of instant coffee.

Tip: For soft macarons, let them rest once filled for about 12 hours in the refrigerator.
