Roast beef with Christmas fruits and heirloom vegetables

Préparation
Peel the washed vegetables and cut them into chunks or lengthwise. Mix the vegetables, bacon, water (MicroCook round 2.25 l) and cook for about 10 min at 600 watts.
Mix and cook again for about 5 min at 600 watts.
Put the 2 roast beefs in the Ultra Pro 5.7 l, arrange the vegetables and bacon around with the cooking juice, then salt and pepper.
Close and cook for about 20 min in the preheated convection oven, Th 6/7 or 200°C.
Uncover and finish cooking for about 15 min (extend cooking if you want the meat more done).
Collect the cooking juice in a bowl (Ultimate mixing bowl 1 l). Leave the meat and vegetables in the Ultra Pro and let rest covered, 10 min out of the oven.
Add to the cooking juice, the cranberries, the coarsely shelled and chopped pistachios (SuperSonic Chopper small), the cream, and mix.
Serve immediately. Variations: Coarsely chop 1/3 of the cranberries and pistachios (SuperSonic Chopper small) and sprinkle them over the still warm roast beef.
Use the rest for the sauce as indicated in the recipe.
You can replace the cream with 150 g of butter cut into pieces and whisk (Beater) to emulsify the sauce.
