Grate a spatzle - Spatzle Party

Making and cooking Spätzle:

• Boil salted water in a large pot.
  When the water boils, place the grater on the pot. Pour the spätzle dough into the hollow (convex) of the grater.
• Scrape with the scraper until the spätzle pass through the holes of the grater and fall into the water.
  When they rise to the surface, they are cooked!
• Remove them with a skimmer, pour them into the colander, rinse under cold water, and drain.
• Add a little oil to prevent them from sticking together and let them rest in a bowl.
• Repeat the operation until the dough is used up.
  

Tip:

• Spätzle will soften and become mushy if you leave them too long in a sauce without first frying them in a pan with a small piece of butter.
  
• You can, if you wish, flavor the dough with a little grated nutmeg.
  
• You can prepare the spätzle in advance; they will keep for 1 week in the refrigerator.
  
• You can also freeze them; they will keep for 3 months in the freezer in the Grand Cold Boxes.
